1 pound ground chicken
1/2 cup breadcrumbs
1 large egg
1/4 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon vegetable oil
1 cup pineapple chunks (drained)
1/2 cup chopped green bell pepper
1/4 cup chopped onion
1/2 cup ketchup
1/4 cup apple cider vinegar
1/4 cup brown sugar
2 tablespoons soy sauce
1 tablespoon cornstarch
2 tablespoons water
Instructions
In a bowl, combine ground chicken, breadcrumbs, egg, milk, salt, and pepper. Mix gently until just combined.
Roll the mixture into one-inch meatballs. You should have about 18-20 meatballs.
Heat vegetable oil in a large skillet over medium heat. Brown the meatballs on all sides. Remove meatballs and set aside.
In the same skillet, add pineapple chunks, green bell pepper, and onion. Cook for 3 minutes until slightly softened.
In a small bowl, whisk together ketchup, apple cider vinegar, brown sugar, and soy sauce. Pour this mixture over the vegetables.
Bring the sauce to a simmer.
In a very small bowl, whisk cornstarch and water to create a slurry. Stir the slurry into the simmering sauce. Cook until the sauce thickens, about 1 minute.
Return the browned meatballs to the skillet. Toss gently to coat them completely in the sweet and sour sauce.
Serve immediately over rice or noodles.
Notes
For extra flavor, you can bake the meatballs at 400 degrees F for 15 minutes before adding them to the sauce.
If you prefer a less sweet sauce, reduce the brown sugar by one tablespoon.
