- 2 cups pecan halves
- 1 cup granulated sugar
- 1/4 cup water
- 1 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a medium saucepan, combine the granulated sugar and water. Stir over medium heat until the sugar dissolves.
- Bring the syrup to a boil and cook for 5 minutes without stirring.
- Stir in the cinnamon, cayenne pepper, and salt.
- Add the pecan halves to the syrup and stir gently to coat them evenly.
- Cook for another 2-3 minutes, stirring constantly, until the syrup thickens and coats the pecans.
- Remove from heat and stir in the vanilla extract.
- Spread the coated pecans in a single layer on the prepared baking sheet.
- Bake for 15-20 minutes, stirring halfway through, until the pecans are toasted and the coating is hardened.
- Let the candied pecans cool completely on the baking sheet before breaking them apart.
