  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon brown sugar
  • 1 teaspoon sesame oil
  • Cooked rice, for serving
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, toss the chicken pieces with 1 tablespoon soy sauce and cornstarch. Set aside for 10 minutes.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Add the bell pepper and broccoli to the skillet. Stir fry for 3 minutes until slightly tender.
  5. Add the snap peas and cook for 1 more minute.
  6. Push the vegetables to one side of the skillet. Add the minced garlic and grated ginger to the empty space and cook until fragrant, about 30 seconds.
  7. In a small bowl, whisk together the sweet chili sauce, 2 tablespoons soy sauce, rice vinegar, and brown sugar.
  8. Return the cooked chicken to the skillet. Pour the sauce mixture over the chicken and vegetables.
  9. Toss everything together quickly until the sauce thickens and coats the ingredients, about 1 minute. Stir in the sesame oil.
  10. Serve immediately over cooked rice. Garnish with sesame seeds.
