  • 2 tablespoons soy sauce

  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup water
  • Optional Toppings: Green onions, fried egg, sesame seeds

Instructions

  1. Cook ramen noodles according to package directions, omitting the seasoning packets. Drain well, reserving about 1/4 cup of the cooking water.
  2. While noodles cook, whisk together the soy sauce, rice vinegar, sweet chili sauce, brown sugar, sesame oil, minced garlic, and grated ginger in a small bowl.
  3. Heat a small saucepan or skillet over medium heat. Pour the sauce mixture into the pan.
  4. Bring the sauce to a gentle simmer, stirring constantly until the sugar dissolves and the sauce thickens slightly, about 1 minute.
  5. Add the reserved noodle water to the sauce and stir to combine.
  6. Add the drained, cooked ramen noodles to the skillet. Toss everything quickly until the noodles are fully coated in the sticky sauce.
  7. Remove from heat immediately.
  8. Serve hot, topped with your favorite additions like sliced green onions or a fried egg.
