2 large sweet potatoes, scrubbed and diced into 1-inch cubes
2 tablespoons olive oil
2 tablespoons sweet chili sauce
1 tablespoon honey or maple syrup
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
In a large bowl, toss the diced sweet potatoes with olive oil, smoked paprika, garlic powder, and salt until evenly coated.
Spread the sweet potatoes in a single layer on the prepared baking sheet.
Roast for 20 minutes.
While the potatoes roast, whisk together the sweet chili sauce and honey or maple syrup in a small bowl.
Remove the potatoes from the oven. Drizzle the glaze mixture over the potatoes and toss gently to coat.
Return the potatoes to the oven and roast for another 10-15 minutes, or until the potatoes are tender and the glaze is sticky and caramelized.
Serve immediately.
Notes
For extra crispiness, ensure the potatoes are in a single layer on the baking sheet.
If you prefer less sweetness, reduce the honey or maple syrup amount slightly.
You can substitute regular paprika for smoked paprika if desired.
