Create a vibrant and flavorful Sweet Chili Salmon Bowl. This recipe pairs perfectly cooked salmon with a sweet and spicy glaze over a base of fresh vegetables and rice for a modern, satisfying meal.

  • 1 pound Salmon fillets
  • 2 tablespoons Sweet chili sauce
  • 1 tablespoon Soy sauce
  • 1 teaspoon Fresh ginger, grated
  • 1 clove Garlic, minced
  • 1 tablespoon Olive oil
  • 2 cups Cooked brown rice
  • 1 cup Broccoli florets, steamed
  • 1 cup Shredded carrots
  • 1/2 cup Sliced red bell pepper
  • 2 Green onions, sliced for garnish
  • Sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the sweet chili sauce, soy sauce, grated ginger, and minced garlic to create the glaze.
  3. Place the salmon fillets on the prepared baking sheet. Brush half of the glaze mixture evenly over the salmon.
  4. Bake the salmon for 12 to 15 minutes, or until it flakes easily with a fork.
  5. While the salmon bakes, heat the olive oil in a skillet over medium heat. Add the broccoli and carrots. Sauté for 3 to 4 minutes until slightly tender-crisp.
  6. Add the sliced red bell pepper to the skillet and cook for 1 more minute. Remove from heat.
  7. To assemble the bowls, divide the cooked brown rice among serving bowls.
  8. Top the rice with the sautéed vegetables.
  9. Place a cooked salmon fillet on top of the vegetables in each bowl.
  10. Drizzle the remaining glaze over the salmon and vegetables.
  11. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • You can substitute brown rice with quinoa or cauliflower rice for a different texture.
  • Feel free to add a squeeze of fresh lime juice over the finished bowl for extra brightness.
  • If you prefer baked vegetables, toss the broccoli, carrots, and peppers with a little oil and roast them alongside the salmon for the last 10 minutes.
