  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1/2 cup panko breadcrumbs
  • 1 cup sweet chili sauce
  • 1/4 cup lime juice
  • 1 tablespoon honey
  • 1 teaspoon sriracha (optional, for extra heat)
  • 12 small corn or flour tortillas
  • For Slaw: 2 cups shredded cabbage (red and green mix), 1/4 cup chopped cilantro, 2 tablespoons mayonnaise, 1 tablespoon lime juice

Instructions

  1. Prepare the shrimp: Pat the shrimp completely dry. Season lightly with salt and pepper.
  2. Set up a dredging station: Place flour in one shallow dish, beaten egg in another, and panko breadcrumbs in a third.
  3. Dredge each shrimp first in flour, shaking off excess, then dip in egg, and finally coat thoroughly in panko breadcrumbs.
  4. Heat olive oil in a large skillet over medium-high heat. Cook the breaded shrimp in batches for 2-3 minutes per side until golden brown and cooked through. Remove and set aside.
  5. Make the sweet chili glaze: In a small saucepan, combine the sweet chili sauce, lime juice, honey, and sriracha if using. Heat over medium until warm and slightly thickened, about 3 minutes.
  6. Toss the cooked shrimp in the warm glaze until fully coated. Keep warm.
  7. Prepare the slaw: In a small bowl, mix the shredded cabbage, cilantro, mayonnaise, and lime juice. Season with a pinch of salt.
  8. Warm the tortillas according to package directions (in a dry skillet or microwave).
  9. Assemble the tacos: Fill each warm tortilla with a portion of the glazed shrimp, then top generously with the fresh slaw. Serve immediately.
