Ingredients

Scale
  • 1 large head cauliflower, cut into bite-sized florets
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (adjust for heat preference)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons maple syrup or honey
  • 1 tablespoon hot sauce (Cajun style)
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, garlic powder, onion powder, thyme, cayenne pepper, salt, and black pepper until evenly coated.
  3. Spread the seasoned cauliflower in a single layer on the prepared baking sheet.
  4. Roast for 15 minutes.
  5. While the cauliflower roasts, whisk together the maple syrup (or honey), hot sauce, and apple cider vinegar in a small bowl to create the glaze.
  6. Remove the cauliflower from the oven. Drizzle the glaze mixture over the hot cauliflower and toss gently to coat.
  7. Return the glazed cauliflower to the oven and roast for another 5 to 10 minutes, or until the edges are slightly caramelized and the cauliflower is tender-crisp.
  8. Serve immediately.

Notes

  • For extra flavor, add 1/2 teaspoon of brown sugar to the dry spice rub.
  • If you prefer a less sticky glaze, reduce the maple syrup slightly.
  • Ensure the florets are in a single layer for optimal crisping.
