Make this hearty Sweet Potato Black Bean Chili for a warm, filling vegetarian dinner. It combines sweet potatoes, black beans, and smoky spices for true winter comfort.

  • 1 large sweet potato, peeled and diced
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to your spice preference)
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the diced sweet potato, black beans, diced tomatoes (with juice), vegetable broth, chili powder, cumin, and smoked paprika to the pot.
  5. Bring the mixture to a simmer.
  6. Reduce the heat to low, cover, and cook for 20 to 25 minutes, or until the sweet potatoes are tender. Stir occasionally.
  7. Stir in the cayenne pepper. Season with salt and pepper to your liking.

Notes

  • For an extra smoky flavor, use chipotle powder instead of cayenne, or add a dash of liquid smoke.
  • If you prefer a thicker chili, mash about 1/4 cup of the sweet potato cubes against the side of the pot.
