  • 1/2 cup almond flour (for gluten-free option, use 1/2 cup more sweet potato puree)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together the mashed sweet potato, melted coconut oil or butter, maple syrup, eggs, and vanilla extract until smooth.
  3. In a separate, smaller bowl, whisk together the cocoa powder, almond flour, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients. Mix gently until just combined. Do not overmix.
  5. If using, fold in the chocolate chips.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 25 to 30 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
