  • 1/4 cup dried cranberries
  • 2 ounces goat cheese, crumbled (optional)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 clove garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the diced sweet potato with 1 tablespoon of olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Spread in a single layer on the prepared baking sheet.
  3. Roast for 20-25 minutes, or until sweet potatoes are tender and lightly caramelized, flipping halfway through.
  4. While the sweet potatoes roast, prepare the kale. In a large bowl, drizzle the chopped kale with the remaining 1 tablespoon of olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Massage the kale with your hands for 2-3 minutes until it softens.
  5. In a small bowl, whisk together the apple cider vinegar, Dijon mustard, honey, and minced garlic to create the dressing.
  6. Once the sweet potatoes are roasted, add them to the bowl with the massaged kale. Add the dried cranberries and crumbled goat cheese (if using).
  7. Pour the honey mustard dressing over the salad and toss gently to combine all ingredients.
  8. Serve immediately or chill for later.
