Make a satisfying taco salad using seasoned ground beef, fresh vegetables, and a creamy dressing. This recipe is quick enough for a weeknight dinner.

Ingredients

Scale
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 head iceberg lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1/2 cup black olives, sliced
  • 1/2 cup crushed tortilla chips or Doritos
  • 1/2 cup Catalina dressing or your preferred creamy dressing

Instructions

  1. Brown the ground beef in a large skillet over medium heat. Drain any excess fat.
  2. Stir in the taco seasoning mix and water. Bring to a simmer and cook for 5 minutes, stirring occasionally until the sauce thickens. Remove from heat.
  3. In a large bowl, combine the chopped lettuce, tomatoes, cheese, and olives.
  4. Add the seasoned ground beef mixture to the salad ingredients.
  5. Pour the dressing over the salad and toss gently to combine all ingredients.
  6. Top with crushed tortilla chips or Doritos just before serving for crunch.

Notes

  • For a healthier option, substitute lean ground turkey for the beef and use low-fat cheese.
  • If making ahead, keep the dressing and chips separate until serving time to prevent sogginess.
  • Use leftover taco meat for easy meal prep lunches throughout the week.
