1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon sugar
1 large egg
1 cup milk
1/4 cup tahini
1 ripe banana, mashed
1 teaspoon vanilla extract
Butter or oil for the griddle
Instructions
Whisk together flour, baking powder, salt, and sugar in a medium bowl.
In a separate bowl, whisk the egg, milk, tahini, and vanilla extract until smooth.
Add the mashed banana to the wet ingredients and mix well.
Pour the wet mixture into the dry ingredients. Stir just until combined; do not overmix. A few lumps are fine.
Heat a lightly oiled griddle or skillet over medium heat.
Pour 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 2-3 minutes per side, until golden brown and bubbles appear on the surface.
Flip and cook the other side until done.
Serve immediately with your favorite toppings.
Notes
For a thinner batter, add a tablespoon more milk.
Taste your tahini first; some brands are more bitter than others.
