Make decadent brownies with a rich, nutty tahini base swirled with homemade caramel. These treats offer a unique, satisfying flavor combination.

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 1/2 cups granulated sugar
  • 1 cup packed light brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup tahini (for batter)
  • 1 cup caramel sauce (for swirling, plus extra for drizzling)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang.
  2. In a large bowl, whisk together the melted butter and both sugars until smooth.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, flour, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the 1/2 cup of tahini until mostly incorporated, leaving some streaks.
  7. Pour half of the batter into the prepared pan. Drizzle half of the caramel sauce over the batter.
  8. Top with the remaining batter. Drizzle the remaining caramel sauce over the top.
  9. Use a knife or skewer to gently swirl the caramel into the batter for a marble effect. Sprinkle with nuts if using.
  10. Bake for 28 to 32 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs attached.
  11. Let the brownies cool completely in the pan before lifting them out using the parchment overhang.
  12. Cut into squares and drizzle with extra caramel before serving.

  • For the best swirl, warm your reserved caramel slightly before drizzling.
  • Do not overbake; these brownies are best when fudgy.
  • Use high-quality tahini for the strongest nutty flavor.
  • Cooling completely before cutting makes clean squares much easier.
