1 (32 ounce) bag frozen tater tots
1 pound breakfast sausage or bacon, cooked and crumbled
1 cup chopped onion
1 (10.5 ounce) can condensed cream of mushroom soup
1/2 cup milk
12 large eggs
1 teaspoon salt
1/2 teaspoon black pepper
2 cups shredded cheddar cheese
Instructions
Preheat your oven to 350 degrees Fahrenheit. Grease a 9×13 inch baking dish.
Arrange half of the frozen tater tots in a single layer on the bottom of the prepared dish.
Sprinkle the cooked sausage or bacon and chopped onion evenly over the tater tots.
In a large bowl, whisk together the cream of mushroom soup, milk, eggs, salt, and pepper until combined.
Pour the egg mixture evenly over the sausage and onion layer.
Top with the remaining half of the tater tots.
Cover the dish with foil and refrigerate for at least 4 hours or overnight.
When ready to bake, remove the foil and bake for 45 minutes.
Remove the foil, sprinkle the shredded cheese over the top, and bake uncovered for another 10 to 15 minutes, or until the cheese is melted and bubbly and the tots are golden brown.
Let the casserole rest for 5 minutes before cutting and serving.
Notes
For a crispier top layer, you can add the cheese during the last 10 minutes of baking instead of the last 15 minutes.
If you are short on time, you can skip the overnight refrigeration and bake immediately after assembly, adding 10 minutes to the initial covered baking time.
You can substitute cooked ground turkey or ham for the sausage or bacon.
