A simple, hearty breakfast casserole featuring layers of crispy tater tots, savory sausage, eggs, and melted cheese. This dish is perfect for feeding a crowd.

  • 1 (32 ounce) package frozen tater tots, thawed slightly
  • 1 pound breakfast sausage, cooked and drained
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 12 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease a 9×13 inch baking dish.
  2. Arrange half of the thawed tater tots in a single layer on the bottom of the prepared baking dish.
  3. Sprinkle the cooked sausage, chopped onion, half of the cheddar cheese, and all of the Monterey Jack cheese over the tater tots.
  4. Top with the remaining tater tots, arranging them evenly.
  5. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  6. Pour the egg mixture evenly over the tater tot and sausage layers. Gently press down on the tots to help them absorb the liquid.
  7. Sprinkle the remaining half of the cheddar cheese over the top.
  8. Bake for 45 to 55 minutes, or until the eggs are set and the top is golden brown. If the top browns too quickly, cover loosely with foil for the last 10 minutes.
  9. Let the casserole rest for 5 to 10 minutes before slicing and serving.

Notes

  • For a make-ahead version, assemble the entire casserole, cover tightly, and refrigerate for up to 24 hours. Add 10 to 15 minutes to the baking time if baking directly from the refrigerator.
  • To make this vegetarian, omit the sausage and add 1 cup of cooked, chopped mushrooms or bell peppers with the onions.
  • For a gluten-free option, confirm your tater tot brand is certified gluten-free.
  • You can use bacon instead of sausage for a different flavor profile.
