1 pound flank steak, thinly sliced against the grain
1 tablespoon sesame oil
1 cup broccoli florets
1 red bell pepper, sliced
1 carrot, thinly sliced
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/2 cup low-sodium soy sauce
1/4 cup mirin (sweet rice wine)
2 tablespoons brown sugar
1 tablespoon cornstarch
1/4 cup water
Cooked rice, for serving
Sesame seeds, for garnish
Instructions
Mix the soy sauce, mirin, brown sugar, cornstarch, and water in a small bowl. Whisk until the cornstarch dissolves. Set the teriyaki sauce aside.
Heat the sesame oil in a large skillet or wok over medium-high heat.
Add the sliced beef and cook until browned, about 2-3 minutes. Remove the beef from the skillet and set it aside.
Add the broccoli, bell pepper, and carrot to the same skillet. Stir fry for 3-4 minutes until crisp-tender.
Add the minced garlic and grated ginger to the vegetables. Cook for 30 seconds until fragrant.
Return the beef to the skillet.
Pour the prepared teriyaki sauce over the beef and vegetables. Stir constantly as the sauce thickens, about 1 minute.
Remove from heat immediately once the sauce is glossy and coats the ingredients.
Serve the stir fry over cooked rice. Garnish with sesame seeds.
Notes
Slice the flank steak thinly against the grain for the most tender results.
If you prefer a sweeter sauce, add one extra teaspoon of brown sugar to the sauce mixture.
You can substitute chicken or tofu for the beef. Adjust cooking times as needed.
