Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup water
  • 2 tablespoons brown sugar (or maple syrup)
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • 1 head butter lettuce or romaine hearts, leaves separated and washed
  • 1 tablespoon vegetable oil
  • Optional toppings: sesame seeds, sliced green onions

Instructions

  1. In a small bowl, whisk together the soy sauce, water, brown sugar, rice vinegar, ginger, garlic, and sesame oil for the teriyaki sauce. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5 to 7 minutes.
  3. Pour the prepared teriyaki sauce over the cooked chicken. Bring the sauce to a simmer.
  4. Stir the cornstarch slurry and pour it into the simmering sauce. Cook, stirring constantly, until the sauce thickens enough to coat the chicken. Remove from heat.
  5. Spoon the teriyaki chicken mixture into the center of each lettuce leaf.
  6. Garnish with sesame seeds and green onions, if using. Serve immediately.

Notes

  • For a gluten-free version, confirm your soy sauce is labeled gluten-free or use tamari.
  • Butter lettuce provides the softest cup; romaine offers the most crunch. Choose what you prefer.
  • You can substitute ground chicken or turkey for diced chicken if you desire a different texture.
  • Prepare the sauce ahead of time to make weeknight assembly quicker.
