Make this easy Tex-Mex Beef Skillet for a quick, flavorful weeknight dinner. This one-pan meal brings bold tastes to your table with seasoned ground beef and hearty additions.

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 bell pepper (any color), chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup frozen or fresh corn kernels
  • 1/2 cup water or beef broth
  • 1/2 cup shredded cheddar or Mexican blend cheese (optional)
  • Optional toppings: sour cream, chopped cilantro, sliced avocado

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and bell pepper to the skillet. Cook until softened, about 5 minutes.
  3. Add ground beef to the skillet. Break it up with a spoon and cook until browned. Drain any excess grease.
  4. Stir in the taco seasoning mix, black beans, diced tomatoes (with liquid), corn, and water or broth. Mix well.
  5. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 10 minutes, allowing flavors to meld.
  6. Remove the lid. If using cheese, sprinkle it over the top. Cover briefly until the cheese melts, about 2-3 minutes.
  7. Serve hot with your favorite toppings.
