1 tablespoon coconut oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 onion, chopped
2 cloves garlic, minced
1 tablespoon minced ginger
3 tablespoons Thai red curry paste (adjust to your spice preference)
1 (13.5 ounce) can full-fat coconut milk
1/2 cup chicken broth
1 tablespoon fish sauce
1 teaspoon brown sugar
1 red bell pepper, sliced
1/2 cup fresh basil leaves
Juice of 1/2 lime
Instructions
Heat the coconut oil in a large pot or Dutch oven over medium heat.
Add the chicken and cook until lightly browned on all sides. Remove the chicken and set it aside.
Add the onion to the pot and cook until softened, about 5 minutes.
Stir in the garlic and ginger and cook for 1 minute until fragrant.
Add the red curry paste and cook for 2 minutes, stirring constantly, to toast the spices.
Pour in the coconut milk and chicken broth. Stir well to combine with the curry paste.
Bring the mixture to a gentle simmer. Stir in the fish sauce and brown sugar.
Return the cooked chicken to the pot. Simmer for 10 minutes, or until the chicken is cooked through.
Add the sliced red bell pepper and cook for another 3-5 minutes until tender-crisp.
Remove the pot from the heat. Stir in the fresh basil leaves and the lime juice.
Serve immediately over steamed jasmine rice.
Notes
You can substitute chicken thighs for breasts if you prefer a richer flavor.
Taste the curry before serving and add more fish sauce for saltiness or more sugar for sweetness as needed.
For extra vegetables, add sliced bamboo shoots or snap peas during step 8.
