  • 2 lbs bone-in, skin-on chicken pieces (thighs and drumsticks work well)
  • 8 cups water or low-sodium chicken stock
  • 1 large onion, quartered
  • 3 carrots, roughly chopped
  • 3 celery stalks, roughly chopped
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon black peppercorns
  • Salt to taste
  • 1 cup egg noodles (optional)
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Place the chicken, water or stock, onion, carrots, celery, bay leaves, thyme, and peppercorns in a large pot.
  2. Bring the mixture to a boil over high heat.
  3. Reduce the heat to low, cover partially, and simmer gently for 1 to 1.5 hours, or until the chicken is very tender. Skim off any foam or fat that rises to the surface during the first 30 minutes.
  4. Remove the chicken pieces from the pot. Let them cool slightly.
  5. Strain the broth through a fine-mesh sieve into a clean pot. Discard the solids (vegetables and herbs). This is your healing broth.
  6. Shred the cooled chicken meat, discarding the skin and bones.
  7. Return the shredded chicken to the strained broth.
  8. If using noodles, add them now and cook according to package directions, usually 6-8 minutes.
  9. Taste the soup and add salt as needed.
  10. Stir in the fresh parsley just before serving.

Notes

  • For a clearer broth, strain it twice.
  • You can use leftover cooked chicken, but simmering the raw chicken builds deeper flavor.
  • If you prefer a richer broth, use all chicken stock instead of water.
  • This soup tastes even better the next day.
