1 pound noodles (spaghetti or linguine recommended)
8 tablespoons unsalted butter
6 cloves garlic, minced
1/4 cup soy sauce (low sodium preferred)
2 tablespoons oyster sauce
1 tablespoon brown sugar
1 teaspoon toasted sesame oil
1/4 cup reserved pasta water
2 green onions, thinly sliced for garnish
Instructions
Cook noodles according to package directions until al dente. Before draining, reserve about 1/2 cup of the starchy pasta water. Drain the noodles.
While the pasta cooks, melt the butter in a large skillet over medium heat.
Add the minced garlic to the melted butter. Cook for about 1 minute until fragrant. Do not let the garlic burn.
Stir in the soy sauce, oyster sauce, and brown sugar. Whisk until the sugar dissolves and the sauce thickens slightly.
Add the cooked, drained noodles to the skillet. Toss well to coat them evenly in the garlic sauce.
Pour in the reserved pasta water, a little at a time, tossing constantly until the sauce clings beautifully to the noodles. You may not need all the water.
Remove the skillet from the heat. Drizzle with the toasted sesame oil and toss one final time.
Serve immediately, garnished with sliced green onions.
Notes
Use fresh garlic for the best flavor impact.
For a richer taste, substitute half the butter with brown butter.
Adjust soy sauce or sugar based on your preferred saltiness and sweetness level.
