Make a delicious, flavorful pasta dinner using only one pot. This recipe requires minimal effort and cleanup, making weeknight cooking simple and satisfying.

  • 1 pound spaghetti or linguine
  • 4 cups chicken or vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Place the spaghetti, broth, diced tomatoes, onion, garlic, oregano, basil, salt, and pepper into a large pot or Dutch oven.
  2. Drizzle the olive oil over the ingredients.
  3. Place the pot over medium-high heat and bring the liquid to a boil.
  4. Once boiling, stir well to prevent the pasta from sticking.
  5. Reduce the heat to medium-low and continue to cook, stirring frequently, for about 10 to 12 minutes, or until the pasta is al dente and most of the liquid has been absorbed.
  6. Remove the pot from the heat. Stir in the Parmesan cheese until melted and the sauce thickens slightly.
  7. Serve immediately, garnished with fresh basil and extra Parmesan cheese if desired.

Notes

  • Stirring often during cooking prevents the pasta from clumping together at the bottom of the pot.
  • If the pasta seems too dry before it is fully cooked, add a splash of water or broth.
  • For a creamier sauce, stir in a splash of heavy cream or a tablespoon of butter at the end.
