Pork Chops (about 1 inch thick)
Salt

Instructions
Pat your pork chops completely dry using paper towels. This step is key.
Season the chops generously on all sides with salt and pepper.
Heat olive oil in a heavy-bottomed skillet over medium-high heat until shimmering.
Carefully place the seasoned pork chops in the hot skillet. Do not overcrowd the pan.
Sear the chops without moving them for 3 to 4 minutes until a deep golden-brown crust forms.
Flip the pork chops. Reduce the heat to medium.
Add butter, smashed garlic, and thyme sprigs to the pan.
Tilt the pan slightly and use a spoon to continuously baste the melting butter mixture over the tops of the chops for about 2 to 3 minutes.
Use a meat thermometer to check the internal temperature. Remove the chops from the heat when they reach 140 degrees Fahrenheit for medium-rare or 145 degrees Fahrenheit for medium.
Transfer the pork chops to a cutting board. Let them rest tented loosely with foil for at least 5 minutes before slicing or serving. Resting allows the juices to redistribute, keeping them moist.

Use bone-in chops for extra flavor and moisture retention, if possible.
Do not skip the resting period; this is crucial for juiciness.
