1 cup cooked, seasoned quinoa
1/2 cup roasted sweet potato cubes
1/4 cup crumbled feta cheese
2 tablespoons toasted pecans
1/4 cup dried cranberries
For Dressing: 3 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon Dijon mustard, 1 teaspoon maple syrup, salt and pepper to taste
Instructions
Prepare the quinoa according to package directions and let it cool slightly.
Toss the mixed greens, cooked quinoa, roasted sweet potato, feta cheese, toasted pecans, and dried cranberries together in a large bowl.
In a small jar, combine the olive oil, balsamic vinegar, Dijon mustard, maple syrup, salt, and pepper.
Seal the jar and shake well until the dressing emulsifies.
Drizzle the dressing over the salad just before serving.
