Ingredients
Potatoes (Russet or Yukon Gold) – 3 pounds, thinly sliced
Heavy Cream – 2 cups
Whole Milk – 1 cup
Unsalted Butter – 4 tablespoons
All-purpose Flour – 2 tablespoons
Garlic – 2 cloves, minced
Sharp Cheddar Cheese – 1 cup, shredded
Gruyère Cheese – 1 cup, shredded
Salt – 1 teaspoon
Black Pepper – 1/2 teaspoon
Nutmeg – dash
Instructions
Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter.
Peel and thinly slice the potatoes. Aim for uniform thickness for even cooking.
In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for one minute, creating a roux.
Stir in the minced garlic. Slowly whisk in the heavy cream and milk until smooth.
Bring the sauce to a gentle simmer, stirring constantly until it thickens slightly. Do not boil.
Remove the sauce from the heat. Stir in the salt, pepper, nutmeg, and half of the shredded cheeses until melted and creamy.
Layer one-third of the sliced potatoes in the prepared baking dish. Pour one-third of the cheese sauce over the potatoes.
Repeat the layering process twice more with the remaining potatoes and sauce.
Top the dish with the remaining shredded cheese.
Cover the baking dish tightly with aluminum foil.
Bake for 45 minutes covered.
Remove the foil and continue baking for another 20 to 30 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.
Let the scalloped potatoes rest for 10 minutes before serving.
Notes
Use a mandoline for perfectly thin and even potato slices.
For extra flavor, gently sauté the garlic in the butter before adding the flour.
If the top browns too quickly, loosely tent it with foil during the final baking stage.
