Follow this simple recipe to create a crunchy, sweet, and salty snack featuring a rich, buttery toffee coating over Chex cereal and pretzels. This mix is perfect for parties or holiday sharing.

  • 12 cups Chex cereal (rice, corn, or wheat mix)
  • 2 cups small pretzels
  • 1 cup pecan halves (optional)
  • 1 cup (2 sticks) unsalted butter
  • 2 cups packed light brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 250 degrees F. Line two large baking sheets with parchment paper.
  2. In a very large bowl, combine the Chex cereal, pretzels, and pecans if you are using them. Set aside.
  3. In a medium saucepan, combine the butter, brown sugar, and corn syrup. Heat over medium heat, stirring constantly until the mixture boils. Once boiling, continue to cook for exactly 1 minute without stirring.
  4. Remove the saucepan from the heat immediately. Stir in the vanilla extract and salt.
  5. Quickly stir in the baking soda; the mixture will foam up. Work fast.
  6. Pour the hot toffee mixture evenly over the cereal mixture in the large bowl. Gently stir with a large spoon or spatula until all the cereal pieces are coated.
  7. Spread the coated mix in a single layer onto the prepared baking sheets.
  8. Bake for 45 minutes, stirring gently every 15 minutes to prevent burning and ensure even coating.
  9. Remove from the oven. If using chocolate chips, immediately sprinkle them over the hot mix. Let the mix cool completely on the sheets until the toffee hardens and becomes crunchy.
  10. Once cool, break apart any large clumps. Store in an airtight container.

Notes

  • For extra crunch, you can bake the cereal mixture for 15 minutes before adding the toffee coating.
  • If you want a stronger salty flavor, add 1/2 teaspoon of extra salt to the dry cereal mixture before coating.
