1 cup rolled oats
1/4 cup chopped pecans
1 tablespoon maple syrup
1 teaspoon ground turmeric
1/4 teaspoon ground cinnamon
Pinch of salt
2 cups plain Greek yogurt (or your favorite yogurt)
1 large ripe mango, diced
1 teaspoon vanilla extract (optional)
Instructions
Preheat your oven to 325 degrees F. Line a small baking sheet with parchment paper.
In a bowl, combine the rolled oats, chopped pecans, maple syrup, turmeric, cinnamon, and salt. Mix well until the oats are evenly coated.
Spread the mixture onto the prepared baking sheet in a single layer.
Bake for 12 to 15 minutes, stirring halfway through, until the granola is fragrant and lightly toasted. Let it cool completely. This is your turmeric granola.
In a separate bowl, stir the vanilla extract into the Greek yogurt, if using.
To assemble the parfaits, start with a layer of yogurt in two glasses or jars.
Top the yogurt with a layer of diced mango.
Sprinkle a generous layer of the cooled turmeric granola over the mango.
Repeat the layers: yogurt, mango, and finish with a final sprinkle of granola on top.
Serve immediately and enjoy your colorful creation!
Notes
You can prepare the turmeric granola a few days ahead and store it in an airtight container.
Use plain yogurt for a less sweet parfait, or vanilla yogurt if you prefer more sweetness.
If fresh mango is unavailable, frozen mango chunks work well after they have thawed slightly.
