  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups low-sodium chicken broth
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1 (15-ounce) can great northern beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1/2 cup heavy cream or half-and-half (optional, for creaminess)
  • 2 cups fresh spinach, roughly chopped
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chicken pieces and cook until lightly browned on all sides. Remove chicken and set aside.
  3. Add the onion, carrots, and celery to the pot. Cook until softened, about 5 to 7 minutes.
  4. Stir in the garlic, rosemary, thyme, and red pepper flakes. Cook for 1 minute until fragrant.
  5. Pour in the chicken broth and add the diced tomatoes. Bring the mixture to a simmer.
  6. Return the chicken to the pot. Reduce heat to low, cover, and simmer for 15 minutes, or until the chicken is cooked through.
  7. Stir in the rinsed cannellini and great northern beans. Simmer for 5 minutes to heat the beans through.
  8. If using, stir in the heavy cream or half-and-half.
  9. Add the fresh spinach and cook just until it wilts, about 1 to 2 minutes.
  10. Season with salt and pepper to your taste.
  11. Serve hot, topped with grated Parmesan cheese.

Notes

  • For a thicker soup, mash about half a cup of the white beans against the side of the pot before adding them in step 6.
  • You can substitute rotisserie chicken for raw chicken; add it in step 6 instead of cooking it raw at the beginning.
  • If you prefer a brothier soup, add an extra cup of chicken broth or water.
