1 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (28 ounce) can crushed tomatoes
2 (15 ounce) cans ricotta cheese
1 egg, beaten
1/2 cup grated Parmesan cheese
12 lasagna noodles
3 cups shredded mozzarella cheese
Instructions
Preheat your oven to 375 degrees F (190 degrees C).
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic, oregano, basil, salt, and pepper. Cook for 1 minute more until fragrant.
Stir in crushed tomatoes. Bring to a simmer, then reduce heat and cook for 10 minutes, stirring occasionally.
In a medium bowl, combine ricotta cheese, beaten egg, and Parmesan cheese. Mix well.
Cook lasagna noodles according to package directions. Drain well.
Spread a thin layer of the tomato sauce in the bottom of a 9×13 inch baking dish.
Layer 3 noodles over the sauce. Spread half of the ricotta mixture over the noodles. Sprinkle with 1 cup of mozzarella cheese.
Repeat the layers: 3 noodles, remaining ricotta mixture, 1 cup mozzarella cheese.
Top with the final 3 noodles, remaining tomato sauce, and remaining 1 cup mozzarella cheese.
Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes, or until bubbly and golden brown.
You can make this recipe ahead of time and refrigerate it before baking. Add a few extra minutes to the baking time if baking from cold.
This lasagna freezes well. Let it cool completely, then wrap tightly in plastic wrap and then foil. Thaw in the refrigerator overnight before reheating.
