  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 cup water or beef broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups shredded cabbage
  • 1/2 cup cooked white rice
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the crushed tomatoes, tomato sauce, and water or beef broth. Stir in the basil, oregano, salt, and pepper. Bring the mixture to a simmer.
  5. Add the shredded cabbage to the skillet. Stir it into the tomato mixture until it begins to wilt.
  6. Stir in the cooked rice.
  7. Cover the skillet and transfer it to the preheated oven. Bake for 30-40 minutes, or until the cabbage is tender and the casserole is heated through.
  8. If desired, sprinkle with cheddar cheese during the last 5 minutes of baking.
  9. Let stand for a few minutes before serving.

Notes

  • For a heartier dish, you can use a mix of ground beef and ground pork.
  • If you don’t have cooked rice, you can add 1/2 cup of uncooked white rice and an additional 1/2 cup of liquid to the casserole before baking. Adjust baking time as needed.
  • This casserole can be made ahead of time and reheated.
