  • 4 large eggs
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

  • Pinch of salt
  • Butter and cocoa powder for preparing ramekins
  • Optional: Fresh berries, whipped cream, or powdered sugar for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Butter and cocoa powder six 4-ounce ramekins.
  2. In a double boiler or microwave-safe bowl, melt the butter and bittersweet chocolate together. Stir until smooth.
  3. Remove from heat and whisk in the confectioners’ sugar until well combined.
  4. In a separate bowl, whisk together the eggs, egg yolks, and vanilla extract.
  5. Gradually whisk the egg mixture into the chocolate mixture until smooth.
  6. Gently fold in the flour and salt until just combined. Do not overmix.
  7. Divide the batter evenly among the prepared ramekins.
  8. Place the ramekins on a baking sheet and bake for 12-14 minutes, or until the edges are set but the center is still soft.
  9. Let the cakes cool in the ramekins for 1 minute.
  10. Carefully invert each ramekin onto a serving plate. The cakes should slide out easily.
  11. Serve immediately, with optional toppings like fresh berries, whipped cream, or a dusting of powdered sugar.

Notes

  • For best results, use good quality bittersweet chocolate.
  • You can prepare the batter a day in advance and refrigerate it. When ready to bake, let it sit at room temperature for 30 minutes before dividing into ramekins.
  • If you don’t have ramekins, you can use a muffin tin, but baking time may vary.
