  • Pinch of salt

Instructions

  1. Melt the butter and set it aside to cool slightly.
  2. In a large bowl, whisk the eggs and sugar together until pale and slightly thickened.
  3. Whisk in the vanilla extract and ground cardamom.
  4. In a separate small bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently whisk in the cooled melted butter until the batter is smooth.
  7. Cover the batter and chill in the refrigerator for at least 1 hour, or up to 24 hours.
  8. Preheat your oven to 375°F (190°C). Generously butter and flour your madeleine pan.
  9. Fill each madeleine mold about three-quarters full with batter.
  10. Bake for 10 to 12 minutes, or until the edges are golden brown and the centers are puffed.
  11. Immediately turn the madeleines out onto a wire rack to cool.
