- 1 cup rolled oats
- 1 cup plant milk (almond or soy recommended)
- 1 ripe banana, mashed
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 tablespoon maple syrup (optional)
- 1 teaspoon vanilla extract
- 1 tablespoon oil or vegan butter for cooking
- Place the rolled oats in a blender or food processor and blend until they form a coarse flour consistency.
- Transfer the oat flour to a mixing bowl.
- Add the mashed banana, plant milk, baking powder, cinnamon, maple syrup (if using), and vanilla extract to the bowl.
- Whisk the ingredients together until just combined. Do not overmix; a few lumps are fine. Let the batter rest for 5 minutes.
- Heat a lightly oiled griddle or non-stick pan over medium heat.
- Pour about 1/4 cup of batter onto the hot surface for each pancake.
- Cook for 3 to 4 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the second side until golden brown.
- Serve immediately with your preferred toppings.
Notes
- For gluten-free pancakes, ensure you use certified gluten-free rolled oats.
- If you prefer thicker pancakes, let the batter rest for 10 minutes or add one tablespoon less plant milk.
- For extra fluffiness, separate the wet and dry ingredients first, then gently fold them together.
- You can substitute the maple syrup with 1 tablespoon of brown sugar if you prefer.
