A simple recipe for rich, creamy, dairy-free chocolate mousse using avocado for texture.

  • 2 ripe avocados
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup unsweetened plant milk (almond or soy)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a food processor or high-speed blender.
  2. Add the cocoa powder, maple syrup, plant milk, vanilla extract, and salt to the food processor.
  3. Process the ingredients until completely smooth. Stop and scrape down the sides as needed to ensure no avocado chunks remain.
  4. Taste the mixture and add more sweetener or cocoa powder if you prefer a stronger flavor.
  5. Divide the mousse into small serving dishes.
  6. Chill in the refrigerator for at least 30 minutes before serving to allow it to firm up slightly.

Notes

  • Use very ripe avocados for the best, creamiest texture and to ensure the avocado flavor is completely masked.
  • For a richer flavor, use dark or Dutch-processed cocoa powder.
  • If the mixture is too thick after chilling, add one tablespoon of plant milk and blend briefly.
