1/4 cup chia seeds
1 cup unsweetened almond milk (or other plant milk)
2 tablespoons unsweetened cocoa powder
2 tablespoons maple syrup (adjust to taste)
1/2 teaspoon vanilla extract

Instructions
In a medium bowl or jar, whisk together the almond milk, cocoa powder, maple syrup, vanilla extract, and salt until the cocoa powder is fully dissolved.
Add the chia seeds to the liquid mixture. Whisk well for about one minute to prevent clumping.
Let the mixture sit on the counter for 5 minutes, then whisk again thoroughly. This second whisk is important for achieving a smooth texture.
Cover the bowl or jar and refrigerate for at least 4 hours, or preferably overnight, until the pudding thickens to your desired consistency.
Stir the pudding before serving. Add more plant milk if it is too thick for your preference.
Serve chilled with your favorite toppings.
Notes
For a richer chocolate flavor, use dark cocoa powder or add 1/2 teaspoon of instant coffee granules.
If you prefer using dates as a sweetener, soak 3-4 pitted Medjool dates in hot water for 10 minutes, then blend them with the plant milk until smooth before adding the other ingredients.
If the pudding becomes too thick after refrigeration, stir in a tablespoon of plant milk at a time until you reach the right texture.
This pudding keeps well in the refrigerator for up to 4 days.
