12 oz pasta (penne, rotini, or linguine)
1 cup jarred roasted red peppers, drained
1/2 cup plain hummus (ensure it is vegan)
1/4 cup reserved pasta water
2 cloves garlic
1 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions
Cook the pasta according to package directions until al dente. Before draining, reserve about 1 cup of the starchy cooking water. Drain the pasta and set aside.
While the pasta cooks, prepare the sauce. Combine the drained roasted red peppers, hummus, garlic, lemon juice, olive oil, salt, and pepper in a food processor or high-speed blender.
Blend the ingredients until completely smooth. The mixture will be thick.
Add the reserved pasta water, one tablespoon at a time, while blending until the sauce reaches a smooth, creamy consistency that coats the back of a spoon.
Return the drained pasta to the pot over low heat. Pour the roasted red pepper hummus sauce over the pasta.
Toss well to coat everything evenly. If the sauce seems too thick, add another splash of pasta water until you reach your desired texture.
Serve immediately, garnished with fresh basil if desired.
Notes
Use a plain, unflavored hummus for the best results; avoid varieties with strong added spices.
For a richer flavor, roast your own red peppers over an open flame or under the broiler until blackened before peeling and using.
If you do not have a food processor, you can vigorously whisk the sauce ingredients together, but you may need more pasta water to achieve maximum smoothness.
