A straightforward recipe for vegetable fried rice served with a homemade sesame ginger sauce.

  • 3 cups cold, day-old cooked white rice
  • 2 tablespoons vegetable oil, divided
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • For the Sauce:
  • 1/4 cup soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon cornstarch
  • 1 teaspoon water

Instructions

  1. Prepare the sauce: Whisk together soy sauce, rice vinegar, sesame oil, ginger, and honey in a small bowl. In a separate tiny bowl, mix cornstarch and water to create a slurry. Whisk the slurry into the sauce mixture. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and quickly scramble until just set. Remove the eggs from the pan and set them aside.
  3. Add the remaining 1 tablespoon of vegetable oil to the pan. Add the onion and cook for 2 minutes until softened.
  4. Add the mixed vegetables and minced garlic. Stir fry for 3 to 4 minutes until the vegetables are tender-crisp.
  5. Add the cold rice to the pan. Break up any clumps with your spatula. Stir fry for 5 minutes, pushing the rice around the pan to heat it through.
  6. Return the scrambled eggs to the pan. Drizzle with 2 tablespoons of soy sauce and 1 teaspoon of sesame oil. Stir well to combine everything.
  7. Pour the prepared Sesame Ginger Sauce over the rice mixture. Stir constantly for 1 to 2 minutes until the sauce thickens slightly and coats the rice evenly.
  8. Serve immediately.

Notes

  • Use cold, day-old rice for the best texture; fresh rice tends to become mushy when fried.
  • Cook the rice over high heat to achieve a slightly smoky flavor characteristic of restaurant-style fried rice.
  • Adjust the amount of ginger in the sauce to your preference.
