Ingredients
Scale
1 pound pasta (like spaghetti or bucatini)
1 pint cherry or grape tomatoes
1/2 cup olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon red pepper flakes
1/2 cup grated Parmesan cheese
Fresh basil leaves, for garnish
Salt and black pepper to taste
Instructions
Cook the pasta according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining.
While the pasta cooks, heat the olive oil in a large skillet over medium heat.
Add the sliced garlic and red pepper flakes to the oil. Cook gently until the garlic is fragrant and just starting to turn golden, about 2-3 minutes. Do not burn the garlic.
Add the whole tomatoes to the skillet. Season with salt and pepper. Cook, stirring occasionally, until the tomatoes burst and break down into a rustic sauce, about 8-10 minutes. You can gently press some of them with a spoon.
Add the drained pasta directly to the skillet with the tomato sauce. Toss well to coat.
Remove the skillet from the heat. Stir in the grated Parmesan cheese, mixing quickly.
Add the reserved pasta water, one splash at a time, tossing continuously until a creamy, emulsified sauce forms that clings beautifully to the pasta.
Taste and adjust seasoning if needed.
Serve immediately, garnished with fresh basil.
Notes
Use high-quality olive oil; it forms the base of this simple sauce.
Don’t rush the tomatoes; letting them fully break down creates the best texture.
If the sauce seems too thick, add more pasta water until you reach your desired consistency.
