This casserole brings the fun of walking tacos to your dinner table. It combines seasoned ground beef, cheese, and crunchy chips in a bakeable dish. It is a simple way to feed a crowd.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can corn, drained
  • 1 (10-ounce) can Rotel diced tomatoes with green chilies, undrained
  • 2 cups shredded cheddar cheese, divided
  • 1 (9.75-ounce) bag Doritos or corn chips, crushed
  • Optional toppings: shredded lettuce, diced tomatoes, sour cream, salsa, sliced jalapeños

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.
  3. Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the liquid has mostly evaporated.
  4. Stir in black beans, corn, and Rotel. Cook for another 2-3 minutes, just until heated through.
  5. Spread half of the crushed chips in the bottom of a 9×13 inch baking dish.
  6. Spoon the beef mixture evenly over the chips.
  7. Sprinkle 1.5 cups of shredded cheddar cheese over the beef mixture.
  8. Top with the remaining crushed chips.
  9. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  10. Remove from oven and sprinkle with the remaining 1/2 cup of shredded cheddar cheese. Let stand for 5 minutes before serving.
  11. Serve hot with your favorite toppings.

Notes

  • For extra spice, add a pinch of cayenne pepper to the beef mixture.
  • You can use ground turkey or chicken instead of ground beef.
  • Adjust the amount of chips to your preference.
  • This casserole is great for potlucks and parties.
