1 cup dried figs, packed
1 cup raw walnuts
1/2 cup rolled oats
1/4 cup honey
1 tablespoon chia seeds
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
Line an 8×8 inch baking pan with parchment paper.
Place the dried figs, walnuts, and rolled oats into a food processor.
Pulse the ingredients until they form a coarse, sticky mixture. Do not over-process into a smooth paste.
Add the honey, chia seeds, vanilla extract, and salt to the food processor.
Pulse until all ingredients are just combined and the mixture holds together when pressed.
Transfer the mixture to the prepared baking pan.
Press the mixture down firmly and evenly into the pan using your hands or the back of a spoon.
Refrigerate for at least 2 hours, or until firm.
Remove the mixture from the pan using the parchment paper overhang.
Cut the slab into 10 to 12 even bars.
Notes
For easier cutting, chill the bars thoroughly before slicing.
Store leftover bars in an airtight container in the refrigerator.
You can substitute dried dates for figs if you prefer.
