  • 8 ounces fresh mozzarella, sliced into 1/4-inch thick rounds
  • 2 ripe medium tomatoes, sliced into 1/4-inch thick rounds
  • 1/2 cup fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Using a 3-inch round cookie cutter or a sharp knife, cut out circles from the watermelon rounds.
  2. Arrange a watermelon circle on a serving plate.
  3. Place a slice of mozzarella on top of the watermelon.
  4. Add a slice of tomato over the mozzarella.
  5. Layer with a few fresh basil leaves.
  6. Repeat the layering process with another watermelon circle, mozzarella, tomato, and basil to create a stack.
