  • 1 cup wild rice, rinsed
  • 3 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 8 ounces mixed mushrooms (cremini, shiitake), sliced
  • 2 cloves garlic, minced
  • 1/2 cup chopped celery
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Combine the wild rice and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 40 to 50 minutes, or until the rice is tender and some grains have burst open. Drain any excess liquid.
  2. While the rice cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the chopped onion and celery to the skillet. Sauté for 5 minutes until softened.
  4. Add the sliced mushrooms to the skillet. Cook for 8 to 10 minutes, stirring occasionally, until the mushrooms have released their moisture and started to brown.
  5. Stir in the minced garlic and dried thyme. Cook for 1 minute until fragrant.
  6. Add the cooked wild rice to the skillet with the vegetables. Stir well to combine everything.
  7. Season generously with salt and black pepper.
  8. Stir in the fresh parsley just before serving.

  • You can use chicken broth instead of vegetable broth for a different flavor profile.
  • Feel free to add a splash of dry sherry when cooking the mushrooms for added depth.
  • For extra texture, toast the dry wild rice lightly in the oil for 2 minutes before adding liquid.
