  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (10 ounce) can diced tomatoes with green chilies
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
  2. Add chopped onion, red bell pepper, and green bell pepper to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Pour in crushed tomatoes, kidney beans, black beans, and diced tomatoes with green chilies.
  5. Add chili powder, cumin, smoked paprika, and cayenne pepper (if using). Stir to combine.
  6. Bring the stew to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, stirring occasionally. This allows the flavors to meld.
  7. Season with salt and black pepper to taste.
  8. Serve hot, with your favorite toppings.

Notes

  • For a vegetarian version, omit the ground beef and add an extra can of beans or some diced sweet potato.
  • Adjust the cayenne pepper to control the spice level.
  • This stew tastes even better the next day as the flavors deepen.
