Make rich, fudgy brownies using Greek yogurt for moisture and protein, sweetened entirely with zero-calorie sweeteners.

  • 1/2 cup unsalted butter, melted
  • 1 cup unsweetened cocoa powder
  • 3/4 cup granulated zero-calorie sweetener (like erythritol or monk fruit blend)
  • 1/2 cup plain non-fat Greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together the melted butter and the zero-calorie sweetener until combined.
  3. Whisk in the Greek yogurt, eggs, and vanilla extract until the mixture is smooth.
  4. In a separate bowl, whisk together the cocoa powder, almond flour, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the sugar-free chocolate chips, if using.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter, for a fudgy texture.
  9. Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment overhang and cutting them into squares.

Notes

  • For a richer chocolate flavor, use Dutch-processed cocoa powder.
  • If you prefer a cake-like texture, add 1/4 teaspoon of baking powder with the dry ingredients.
  • Greek yogurt adds moisture; avoid overbaking to keep the brownies fudgy.
