  • 1 tablespoon olive oil
  • 1 pound shrimp, peeled and deveined
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups Arborio rice
  • 1/2 cup dry white wine
  • 6 cups hot chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons unsalted butter
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add shrimp and cook for 2-3 minutes per side until pink. Remove shrimp and set aside.
  2. Add onion to the same pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Add Arborio rice to the pot. Stir constantly for 2 minutes to toast the grains.
  4. Pour in the white wine. Stir until completely absorbed.
  5. Add one ladleful of hot broth to the rice, stirring constantly until the liquid is absorbed. Continue adding broth, one ladleful at a time, stirring frequently and waiting until each addition is absorbed before adding the next. This process takes about 20-25 minutes.
  6. When the rice is creamy and al dente, remove the pot from the heat.
  7. Stir in the Parmesan cheese, butter, lemon zest, and lemon juice. Mix well until the risotto is rich and creamy.
  8. Season with salt and pepper to your taste.
  9. Gently fold in the cooked shrimp.
  10. Serve immediately, garnished with extra Parmesan cheese and fresh parsley.

Notes

  • Keep your broth hot throughout the cooking process. Adding cold broth stops the cooking and affects the texture.
  • Stirring constantly develops the starch in the rice, which creates the signature creamy texture without adding cream.
  • You can substitute vegetable broth for chicken broth if you prefer a vegetarian base (omit shrimp for a true vegetarian dish).
