Enjoy a creamy, satisfying Alfredo sauce without the carbs. This recipe swaps traditional pasta for zucchini noodles, offering a delicious and healthier alternative that tastes just like the real thing.

Ingredients

Scale
  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Wash and trim the ends of the zucchini.
  2. Use a spiralizer to create zucchini noodles. Alternatively, use a vegetable peeler to create wide ribbons or julienne the zucchini.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add minced garlic and cook until fragrant, about 1 minute.
  5. Pour in heavy cream and bring to a gentle simmer.
  6. Stir in Parmesan cheese until melted and the sauce is smooth.
  7. Season with salt and pepper.
  8. Add the zucchini noodles to the skillet and toss to coat them in the sauce.
  9. Cook for 2-3 minutes, or until the zucchini noodles are tender-crisp. Do not overcook, or they will become mushy.
  10. Serve immediately.

Notes

  • For a richer sauce, you can add a tablespoon of butter along with the olive oil.
  • Feel free to add cooked chicken, shrimp, or vegetables for a complete meal.
  • Adjust seasoning to your taste.
