Enjoy soft, fluffy Gluten-Free Dinner Rolls that truly rise. This recipe gives you the texture of traditional rolls, making holiday baking easy and inclusive.

Ingredients

Scale
  • 1 cup warm water (about 105-115°F)
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1 teaspoon sugar
  • 3 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1 teaspoon salt
  • 1 tablespoon psyllium husk powder
  • 1/4 cup melted butter or oil
  • 1 large egg, lightly beaten
  • 1 teaspoon apple cider vinegar

Instructions

  1. Activate the yeast: In a small bowl, combine the warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
  2. In a large bowl, whisk together the gluten-free flour blend and salt.
  3. Add the psyllium husk powder to the dry ingredients and whisk well. This is key for structure.
  4. Add the melted butter (or oil), beaten egg, and apple cider vinegar to the yeast mixture. Stir gently.
  5. Pour the wet ingredients into the dry ingredients. Mix with a sturdy spoon or a stand mixer until a sticky dough forms. Do not overmix.
  6. Cover the bowl with plastic wrap or a clean towel. Let the dough rise in a warm spot for 45-60 minutes, or until visibly puffy.
  7. Gently punch down the dough. Divide it into 8 equal portions. Lightly wet your hands and shape each portion into a smooth, round roll.
  8. Place the rolls on a parchment-lined baking sheet, leaving space between them. Cover loosely and let them rest for a second rise for 20-30 minutes.
  9. Preheat your oven to 375°F (190°C).
  10. Bake for 20-25 minutes, or until the tops are golden brown.
  11. Brush the tops with melted butter immediately after removing them from the oven for added softness.
  12. Cool slightly on a wire rack before serving warm.

Notes

  • Ensure your warm water is not too hot, or it will kill the yeast.
  • Using a gluten-free flour blend that already contains xanthan gum is important for the best texture.
  • The dough will be stickier than traditional wheat dough; handle it gently.
  • For extra soft rolls, place a shallow pan of hot water on the bottom rack of the oven during baking to create steam.
