Make these simple, layered bars featuring a chocolate crust, a creamy mint filling, and a rich chocolate topping. These bars require no oven time.

  • 1 1/2 cups crushed chocolate sandwich cookies (about 30 cookies)
  • 1/4 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/4 teaspoon green food coloring (optional)
  • 1 cup heavy whipping cream, cold
  • 4 ounces semi-sweet chocolate, chopped
  • 1/4 cup heavy cream

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Combine the crushed cookies and melted butter in a bowl. Press this mixture firmly into the bottom of the prepared pan to form the crust. Place the crust in the freezer while you prepare the filling.
  3. In a large bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and peppermint extract until smooth. Mix in the green food coloring, if using.
  4. In a separate bowl, whip the 1 cup of cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
  5. Spread the mint filling evenly over the chilled crust. Return the pan to the freezer for at least 30 minutes to firm up.
  6. Prepare the topping: Place the chopped chocolate in a small, heatproof bowl. Heat the 1/4 cup of heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chocolate. Let it sit for 5 minutes, then whisk until smooth to create a ganache.
  7. Pour the chocolate ganache over the set mint layer. Spread evenly.
  8. Cover the pan loosely and refrigerate for at least 4 hours, or until the topping is firm.
  9. Use the parchment paper overhang to lift the bars from the pan. Cut into squares before serving.

Notes

  • For a firmer bar, freeze the finished product for 2 hours before slicing.
  • If you prefer a stronger mint flavor, increase the peppermint extract to 3/4 teaspoon.
  • Use high-quality chocolate for the best topping flavor.
