Create a beautiful, rustic Pear Rosemary Galette. This free-form tart combines the sweetness of pears with the earthy fragrance of rosemary for a delightful dessert.

  • 1 prepared pie crust (store-bought or homemade)
  • 2 ripe pears, peeled, cored, and thinly sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon fresh rosemary, finely chopped
  • 1/2 teaspoon lemon juice
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. In a medium bowl, gently toss the sliced pears with the granulated sugar, flour, chopped rosemary, and lemon juice.
  3. Unroll the pie crust onto the prepared baking sheet. You can leave it round or gently shape it into a rough oval.
  4. Arrange the pear mixture in the center of the dough, leaving a 2-inch border around the edges.
  5. Fold the edges of the dough up and over the filling, pleating it as you go to create a rustic border.
  6. Brush the folded crust with the beaten egg.
  7. Sprinkle the coarse sugar evenly over the crust.
  8. Bake for 30 to 35 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Let the galette cool slightly on the baking sheet before slicing and serving.

Notes

  • Use firm but ripe pears for the best texture. Bosc or Anjou work well.
  • If you prefer a sweeter filling, increase the sugar slightly.
  • Rosemary flavor deepens during baking, so use it sparingly at first.
